本研究采用超声波辅助DMBAC/异辛烷/正辛醇反胶柬体系萃取大豆蛋白,分析超声波技术影响反胶柬萃取大豆蛋白的主要影响因素,得到大豆蛋白的最佳前萃工艺条件为豆粉加入量为0.02g/mL、超声温度40℃、pH9.0、超声功率270W、超声时N20min、KCl浓度为0.2mol/L、Wo=15,在此条件下蛋白前萃率为72.38%。
This study using ultrasonic auxiliary DMBAC/isooctane/n-octyl reverse micelle system extracted soy protein, and analyzed that main influence factors of reverse micelle extracting soy protein. After the test and research, the optimum technological conditions were soy flour concentration 0.02 g/mL, ultrasonic temperature 40 ℃, pH 9.0, ultrasonic power 270 W, ultrasonic time 20 min, KC1 concentration 0.2 mol/L, W0=15, and soy protein extraction rate was 72.38% on this condition.
