鲟鱼是我国重要的淡水养殖鱼类,文章对其蛋白质和氨基酸、脂肪和脂肪酸、糖类、维生素和矿物元素需要量,以及蛋白源、脂肪源和添加剂研究进展进行综述。不同鲟鱼蛋白质和脂肪的需要量以及不同蛋白源和脂肪源的利用存在差异。研究表明,鲟鱼蛋白质需要量为38%~44%,鲟鱼可很好地利用大豆蛋白。鲟鱼饲料中脂肪含量应大于9%,不同品种鲟鱼对脂肪的利用不同,如高首鲟可利用35%脂肪,鲟鱼对鱼油、豆油、菜籽油等脂肪源均能很好地利用,鲟鱼也能很好地利用糖类。一些功能性添加对鲟鱼的生长和免疫具有促进作用。
Sturgeon is an important fresh water culture fish in China. The research advancement of protein and amino acid, lipid and fatty acids, carbohydrate, vitamin, mineral elements and protein source, lipid source and additive was reviewed in this paper. The protein and lipid requirement, the utilization of different species of sturgeon on protein and lipid source is different. In conclusion, the protein requirement of sturgeon is 38%-44%, the soy protein can be utilized effectively by sturgeon. Lipid level in feed of sturgeon should be more than 9%, the ability of lipid utilization by different sturgeon is different, such as white sturgeon can use 35% lipid, and sturgeon can utilize fish oil, soy oil and rapeseed oil effectively. Sturgeon can use carbohydrate effectively too. Some additive can improve the growth performance and immunity of sturgeon.
