为了探究大麦的黏度特性,文章采集了12个品种的大麦样品,测定了大麦籽粒的营养成分、容重及两种粉碎粒度的大麦粉(粉碎筛片孔径:1.5和2.0mm)的RVA黏度值(峰值黏度、低谷黏度、衰减值、最终黏度和回生值),分析了不同品种间理化指标的差异显著性和相关性。结果表明:不同品种的大麦,营养成分、容重和粉碎粒度均存在不同程度的差异。过2.0mm孔径的大麦粉样品黏度值和变异系数明显低于1.5mm的。5个黏度参数均与粉碎粒度呈极显著的负相关(P〈0.01),与粗蛋白质含量呈显著负相关(P〈0.05);衰减值、最终黏度和回生值还与酸性洗涤纤维含量存在显著的负相关关系(P〈0.05)。基于所测定的理化指标,将12个大麦品种分为4个类群,以指导饲料厂进行原料选购。
In order to study the viscosity properties of barley, 12 barley cultivars samples were collected, the nutritional components, bulk density of barley grain and RVA viscosity parameters (peak viscosity, trough viscosity, breakdown viscosity, final viscosity, setback viscosity) of barley meal ground on a mini-mill with 1.5 mm and 2.0 mm screens were determined. Difference significance and correlations of these physicochemical properties among barley cuhivars were analyzed. The results showed that, there were differences of different degrees in nutritional components, bulk density and geometric mean diameter among barley cultivars. Geometric mean diameters of barley meal samples grounded through 1.5 mm screens were strongly lower than those grounded through 2.0 mm screens, and the values of viscosity parameters were correspondingly higher for higher starch gelatinization degree. Correlation analysis showed that, all five viscosity parameters presented significant negative correlations with geo- metric mean diameter (P〈0.01) and crude protein content (P〈0.05). Breakdown viscosity, final viscosity and setback viscosity were negatively and significantly correlated with crude acid detergent fibre content (P〈0.05). System cluster analysis was conducted according to these physicochemical properties, the barley samples were clustered into four categories for guiding the purchase of barley cultivars in practical production.
