国内许多乳品从业者对“预巴杀”的概念及其在生产中的应用含混不清。通过查阅国际专业乳品机构相关资料,对“Thermization”的定义、生产中应用方式进行了解析,并对其中文译名改为“热抑菌”的建议进行了阐释,以期对国内乳品加工企业的不规范操作进行纠正和规范。
The idea of "pre-pasteurization" and its application in China dairy processing is confused to most dairy producers. Definition of "Thermization" and its use in processing were analyzed by consulting the related data of national dairy organization, and the advised translation of "heat inhibition of microorganism" was also explained. All about of this was to amend and standardize the wrong processing in China dairy company.
