建立了超滤浓缩-高效液相色谱法测定乳中乳铁蛋白的方法。该方法样品处理为样品用磷酸盐缓冲液稀释后,样液先通过肝素免疫亲和柱净化、磷酸氢二钠-氯化钠溶液洗脱,然后采用超滤浓缩后直接测定。采用紫外检测器检测。本方法检出限为0.01mg/100g。该法具有样品处理简单方便,灵敏度高,重现性好,分析时间短等优点。该方法测定的为具有活性功能的乳铁蛋白含量,解决了乳铁蛋白质量分数较低的生乳及各类液态乳只采用肝素亲和柱净化后测定灵敏度不能满足测定要求的问题,对评价乳的营养价值提供准确数据。
