综述了辐照加工技术的概况、食品辐照的特点以及该技术在熟食领域的研究现状,根据湘味熟食产业发展中存在的微生物超标和防腐剂超范围或超量使用的主要问题,提出了利用辐照技术解决此间题的可行性,并展望了其应用前景。
The general situation and the characteristics of irradiation technology and the present research situations of irradiation technology in prepared food field were summarized. According to the major problems exist in the development of Hunan taste prepared food industry that the microorganism is over the standard and the preservative use overrun or out of dosage, the feasibility of using irradiation technology to solve these problems was proposed and its applications were prospected.
