以进口甜樱桃为试材,研究了电子加速器和钴源辐照处理对果实货架品质的影响,分析了不同剂量处理条件下甜樱桃的呼吸强度、维生素C、还原糖、可滴定酸、可溶性蛋白质、总氨基酸、总可溶性固形物、果实硬度、失重率、腐烂率的变化情况。结果表明:辐照处理未导致甜樱桃果实总可溶性固形物、还原糖、可滴定酸含量的显著损失;电子直线加速器辐照导致甜樱桃果实维生素C含量和果实硬度降低、腐烂率增加;钴源辐照的效果优于电子直线加速器,250 Gy处理的甜樱桃在货架期25±3℃存放5 d后,维生素C含量、可滴定酸、果实硬度均高于未辐照处理,腐烂率比未辐照处理低8.34%。
The effects of radiation treatments with an electron accelerator and a cobalt unit on the quality of imported sweet cherry in shelf life were studied,and the qualities of the sweet cherry treated at different doses were analyzed in terms of respiratory intensity,vitamin C,reducing sugar,titratable acidity,soluble protein,total amino acids,total soluble solids,fruit firmness,weight loss and putresci-bility in order to provide technical data for application of irradiation technology to entry quarantine treatment.The results showed that the radiation treatments did not make the total soluble solids,reducing sugar and titratable acidity decrease significantly;The radiation treatment with an electron linear accelerator led the vitamin C and fruit firmness to decrease and the putrescibility to increase;But a cobalt unit was superior to an electron linear accelerator in the effect of radiation treatment,and the vitamin C,titratable acidity and fruit firmness of the sweet cherry treated at 250 Gy were higher than those of the sweet cherry without radiation treatment after storage at 25±3℃for 5 d,and also the putrescibility of the treated sweet cherry was 8.34%lower than that of the untreated.
