主要综述近年来国内外对食品干燥过程中水分扩散特性的研究现状,分析干燥过程中物料性质、工艺参数、前处理作用、干燥方式等对水分扩散特性的影响,以及水分扩散迁移与干燥产品品质之间的联系,旨在为干燥理论研究的完善提供参考。
