从无锡惠山采集的土样中筛选得到一株产低温脂肪酶的细菌,经形态和16SrDNA序列鉴定,命名为Serratia marcescens SYBC Y—R。利用合成培养基初步确定摇瓶发酵产脂肪酶的最适碳源为乳糖(质量浓度2.5g/L),最适氮源为氯化铵(质量浓度1.5g/L),钙离子明显地促进了该茵发酵产脂肪酶。
