从贵州各地独具特色的传统大豆发酵食品中分离筛选得到11株肽酶高产菌株,对该11株菌进行生长曲线、生长温度、培养pH值、耐盐性、紫外线照射敏感性以及抗生素耐药性和产有毒有害物质的检测与综合评价。结果表明,除DF2-1外的10株菌均可作为发酵生产的参考供试菌株,其中最适宜的菌株为ZMJ-5。
11 high peptidase strains obtained from traditional soybean fermentation food sample of Guizhou Province were tested including growth curve,growth temperature,pH value of culture,salt tolerance,ultraviolet light resistance,antibiotic sensitivity.The results showed that all strains could be fermentation strain except DF2-1,and ZMJ-5 is the best.
