2011~2012年大连市西岗区中小学校午餐营养素含量检测

目的了解大连市某区学生午餐中若干营养素的含量,为制订营养午餐措施提供资料。方法2011年4月至2012年10月采集某区中小学生午餐33份,测定蛋白质、脂肪、钙、铁、锌含量并予以评价。结果 2011~2012年合计检测33份午餐,钙含量为4.94~343.68mg,达标率仅为3.03%,达到标准值60%的也仅为3.03%;小学低年级组(111.23mg)〉初中组(88.90mg)〉小学高年级组(63.27mg)。铁含量为1.48~252.80mg,达到标准值的占78.79%,不足标准值60%的有18.18%;小学高年级组(77.40mg)〉小学低年级组(44.87mg)〉初中组(42.71mg)。锌为1.16~60.29mg,达到标准值的占69.70%;小学高年级组(19.78mg)〉初中组(13.10mg)〉小学低年级组(11.06mg)。蛋白质含量为2.28~133.96g,达标率仅为48.48%,达到标准值120%的36.36%;初中组(43.03g)〉小学高年级组(35.07g)〉小学低年级组(20.57g)。脂肪含量为2.60~47.14g,达标率为72.73%;初中组(43.03g)〉小学高年级组(35.07g)〉小学低年级组(20.57g)。结论大连市某区学生午餐中各种营养素普遍存在着含量差距很大的现象,需要均衡;钙缺乏非常严重,蛋白质缺乏严重;脂肪超标;铁、锌也存在缺乏现象。

Objective To understand the contents of 5 nutrients in school lunch for primary and high school students in Xigang district,Dalian city,so as to provide basis for measures for nutrition lunch. Methods A total of 33 samples were collected during April, 2011-October, 2012. The contents of protein, fat, calcium, ferrum and zinc were detected and evalua- ted respectively. Results During April, 2011-October, 2012, a total of 33 samples of lunch were detected, the calcium content was 4.94 mg-343.68 mg,and there was only 3.03% up to the standard value (SV). And there was also only 3 . 03% up to the 60% of the SV. 6 8 age group (lll. 23 mg)〉12-15 age group(88.90mg)〉9-11 age group(63.27 rag). The content of ferrum was between 1.48 mg-252.80 rag,and 78.79% of the samples were up to the SV. And there was 18.18% of the samples even below the 60% of the SV. 9-11 age group(77.40 mg)〉6-8 age group(44.87 mg)〉12-15 age group(42.71 mg). The content of zinc was 1.16 rag-60.29 rag,and 69.70% of the samples were up to the SV. 9-11 age group(19.78 mg)〉12-15 age group(13.10 mg)〉6-8 age group(11. 06 mg). The content of protein was 2.28 g-133.96 g, and only 48.48% of the samples were up to the SV. And there was only 36.36% of the samples above the 120% of the SV. 12-15 age group(43.03 g)〉9-11 age group(35.07 g)〉6-8 age group(20.57 g). The content of fat was 2.60 g-47.14 g,and 72.73% of the samples were up to the SV. 12-15 age group(43.03 g)〉9-11 age group(35.07 g)〉6-8 age group (20.57 g). Conclusion There are big gaps in the contents of 5 nutrients in school lunch for primary and high school students in Xigang district,Dalian city, so they need to be balanced. The deficiencies in calcium and protein are serious. The fat is excessive. And the ferrum and zinc are also deficient.
