为了提高豆渣附加值,以豆渣为基质固体发酵赤灵芝[Ganoderma lucidum(Curtis∶Fr)P.Karst],通过单因素试验研究了发酵时间、接种量、培养温度及蔗糖添加量对灵芝菌丝生长和发酵豆渣多糖含量的影响,并用正交试验优化了发酵条件.结果表明,蔗糖添加量1.0%、接种量12%、培养时间12d、培养温度27℃条件下发酵豆渣多糖含量最高.
In order to improve the added value of soybean dregs,soybean dregs were utilized to ferment Ganoderma lucidum (Curtis∶Fr) P.Karst.Fermentation time、inoculum size、culture temperature and sucrose content on the effects of ganoderma lucidum mycelia growth and fermented bean curd polysaccharide content were studied by single factor experiment.The technolgy conditions of fermentation were optimized by orthogonal test.Results showed that the optimum condition for red ganoderma lucidum fermentation bean dregs was cane sugar 1.0%,quantity of 10%,10d training time,culture temperature 30 ℃.
